Executive Chef Jim Fiala honors his classical French and Italian training, and is always looking for ways to incorporate locally-sourced, farm-fresh ingredients into simple and beautifully-prepared dishes. While years of practice and training have led Jim to create the perfect handmade pasta, his passion lies in his people. From Jim’s staff, guests, and purveyors, anyone who comes into contact with this big-hearted chef is sure to have a good day. His love for cooking began while he worked in the kitchen on the Clipper Cruise Line, and he went on to graduate from the California Culinary Academy in San Francisco. After working in restaurants in San Francisco, Chicago, New York City and Puerto Rico, Jim returned to St. Louis, he opened The Crossing Restaurant in 1998, followed by Acero’s opening in 2007.
