Ingredients for the Irish Stew
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 large carrots, sliced
- 6 medium Yukon Gold potatoes, cut into chunks
- 4 cups beef broth
- 1 cup stout beer (optional, for added richness)
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 2 bay leaves
- 1 tsp dried thyme
- 1/4 cup fresh parsley, chopped (plus extra for garnish)
- 2 tbsp flour (for thickening)
To make the Irish Stew
- Brown the Beef: Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, then brown in batches to ensure even cooking. Transfer browned beef to a plate.
- Sauté Vegetables: In the same pot, add the onion and garlic. Cook for 2-3 minutes until softened.
- Build the Broth: Stir in the tomato paste and flour, cooking for 1-2 minutes. Gradually add the beef broth and stout beer (if using), stirring to dissolve the flour mixture. Add Worcestershire sauce, bay leaves, thyme, carrots, and potatoes.
- Simmer: Return the beef to the pot and bring to a gentle boil. Reduce heat, cover, and let simmer for 1.5 to 2 hours until the meat is tender and the broth has thickened.
- Add Fresh Parsley: Stir in chopped parsley just before serving for a fresh, herby finish.
- Serve: Ladle the stew into bowls, garnish with extra parsley, and enjoy with crusty bread or traditional Irish soda bread.
This hearty Irish stew is perfect for St. Patrick’s Day gatherings or any cold-weather occasion. Its rich, savory broth and tender meat make it a standout dish that pairs wonderfully with a pint of your favorite Irish stout. Sláinte!
