Ingredients for the Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 1/4 cup granulated sugar

To make the Crust

Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, melted butter and sugar. Press the mixture into the bottom of a 9-inch springform pan to create an even crust. After, that bake the crust in the preheated oven for 10 minutes. Remove and let it cool while you prepare the filling.

 

 

Ingredients for the Cheesecake Filling

  • 4 packages (32 ounces) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

To make the Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla extract and continue to beat until well combined. Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl to ensure even mixing. Mix in the sour cream and heavy cream until the batter is smooth and creamy. Pour the cream cheese mixture over the cooled crust in the springform pan. Bake in the preheated oven for about 1 hour or until the center is set and the top is lightly browned. Allow the cheesecake to cool in the oven with the door ajar for about an hour, then refrigerate for at least 4 hours or overnight. Once fully chilled, remove the cheesecake from the springform pan and top with caramel, pecans and chocolate sauce.
